A restaurant appreciated not only by lovers of exquisite food, but aficionados of fine music. Coda is a part of the luxurious hotel Aria, famous for its blend of food with music. Chef David Šašek practices a classic French method of cooking in a vacuum Sous Vide. Its goal is the obtain the highest quality and flavor from each ingredient. Ingredients are warmed at relatively low temperatures for very long periods of time, sometimes over 24 hours. The results are, for example, very tender meats that literally melt on your tongue.
The main roles in the chef’s repertoire are played by seasonal and select ingredients. As the last tones of his score fade away, guests reluctantly leave Coda, in the company of a strong emotional experience. Excellent lunches or dinners are not just about good food and wine.
